Here are 5 thoughts I've had about Provo today:
5. I think it is sad that the majority of the student population leaves just when Provo starts to bloom in mid-April. Spring is absolutely stunning in this town, and only those of us year-rounders get to see the whole of it. Not only that, summer in Provo is a riot.
4. On the other-hand I like the feel of student-free traffic and shorter lines at the Rio.
3. Have you seen the tulips at the intersection of Campus Drive and the road that runs by the Marriott Center? Breathtaking I tell you.
2. The view of Timpanogas is never more stunning than in April when the sun sets, painting the snow on the tip of the mountain a glowing orange against a spring sky. Keep your eyes out for it, and think of me fondly.
1. Try the Carne Asada fries at Rancheritos (formerly Betos). You might have to visit your bishop after doing so because you'd be breaking the Word of Wisdom, or Gluttony, but this plate might just be worth a trip to Hell. Fries, guacamole, sour cream, carne, carne, carne and cheese, die and pitchfork.

I can take a hint. you think I shouldn't have left provo and you think I went to hell where there are no carne asada fries.
I don't think so. I came to a hell with more great fabric stores, is what I did.
Provo is so great in the summer BECAUSE the students are gone. No offense, we love you students, but we need the reprieve.
I remember those sunsets. They were stunning!
I think I got a stomach ache just looking at that food.
As someone who occasionally partakes in "adult" beverages, I can honestly say that the only time I can fully stomach Betos (because I'm stubborn & I'll never use the new name) is on a night that involves many of these so-called adult drinks. I always wake up the next morning and try to eat my leftover carne asada burrito only to discover that it's pretty much impossible.
But as someone who works at UVU, I sure do love it when spring rolls around and Provo/Orem empties out. Gotta love less traffic and shorter lines.
The Carne Asada fries are one of my sinful indulgences. So is the bacon breakfast burrito! Betos' (Why did the one in Provo switch to Rancheritos but the one in Springville is still Beto's) is one of our favorites. Especially late at night after the kiddies are in bed. A movie, a plate of nachos or fries, a perfect evening.
When I was growing up (in Nebraska), we would come out every year in August to visit my grandparents who lived in Provo (right off of Canyon Rd.). I'd think Wow, this place is just so ugly and brown. And then I went to school there, and ended up living there for 7 years. I still remember the first fall that I lived there, and we went driving up Provo Canyon, and I was just stunned by the beauty of it all.
Your sister is Stephanie N. Two great minds do think alike, I enjoy both of your blogs, yours for the new look on Provo, I was raised in Payson just to the south but have always felt at home in Provo, with your blog I am able to get a new handle on the very best Provo has to offer. As for Stephanie's blog she is an inspiration, a force to be wrenck'n with I thank you both. Hoping you have the best summer.
